Chemex

The Chemex saw the light back in 1941 when a chemist tried inventing a simple and elegant tool to brew coffee with. This pour-over method is similar to the V60. The Chemex paper filters are 20-30% denser than V60 giving you a very aromatic coffee taste and preventing coffee sediment. It comes in various shapes and you can prepare a serving of 3-10 cups depending on your chemex size. 

Requirements for a two cup brew (what you need?):

  • Chemex.

  • Paper filters.

  • 30 grams of Hailed House Blend

  • 500 grams of hot water.

  • Kettle.

  • Scale. “optional”

  • Grinder.  “optional”

Method:

  1. Place the paper filter in Chemex and pre-heat it with hot water.

  2. Discard water after 30 seconds.

  3. Grind coffee beans medium-coarse. 

  4. Add 30 grams of coffee grounds.

  5. Let boiling water rest for a minute/til temperature reaches 95c +/- 3c.

  6. Add 100 grams of water and distribute gently when pouring.

  7. Allow to fully drown until you see the coffee bed.

  8. Pour 200 grams of water with high agitation intermittently over 30 seconds.

  9. Allow the coffee to fully drown.

  10. Add the remaining 200 grams of water and stir gently when pouring. 

  11. Allow coffee to drown for 30 seconds with a brew time of 4-5 minutes in total.

 

Serve to a cup and enjoy!

The Chemex is a great soothing process. It comes in various sizes allowing you the possibility of large servings, 3-10 cups.
